For the chestnut puree: 1 potato, 2 stalks of celery, 200 g chestnuts (pre-cooked), salt, 2 cardamom pods, 100 g of cream, 100 ml of milk, 50 g of flour, 50 g of butter, 1 teaspoon of pink peppercorns

For the honey duck: 2 Barbarie duck breast fillets (approx. 300 g each) 1- 2 eggs (100 g) 2 tbsp honey 1 tbsp chopped coriander leaves salt 100 g panko (Asian breadcrumbs) 3 tbsp olive oil

Preparation: 1. For the chilli sauce, cut the chilli pepper in half lengthways, remove the core, wash and cut into cubes. Peel the garlic. Wash the coriander, shake it dry and pluck the leaves. Mix the chilli, garlic and coriander with the lime juice and 1 tbsp olive oil in a blender or with a hand blender and season with salt and green pepper. Then stir the remaining olive oil into the dip.

2. For the chestnut puree, peel and wash the potatoes. Clean and wash the celery and cut into small cubes with the potato. Cook the potatoes, celery and chestnuts in salted water with the cardamom pods for about 15 minutes.

3. In the meantime, wash the duck breast fillets for the honey duck and pat dry. Place the eggs, honey, coriander and a pinch of salt in a deep plate and whisk well. Also put the panko in a deep plate. Cut the duck breast fillets into 1 cm thick slices and season with a little salt. Pull the meat slices through the egg mixture and bread with the panko.

4. Drain the cooked vegetables and let them evaporate. Whip the cream until stiff. Remove the cardamom pods and mash the vegetables along with the milk and flour in the saucepan. Stir in the cream, butter and pink peppercorns. heat the chestnut puree again and season with salt.

5. Heat the olive oil in a pan and fry the meat on both sides over medium heat for about 4 minutes until golden brown.

6. Arrange the breaded honey duck on plates and serve the chestnut puree and the chili sauce separately.
